Bow Ties with preserved Lemon Basil Cream Sauce

Serves 4 as a side dish
- 1 lb bow tie pasta
- 2 cups heavy cream
- 1 preserved lemon quartered (flesh removed from rind, rind chopped – flesh discarded)
- 1 fresh lemon juiced and zested
- 1 shallot chopped fine
- 3-4 Tbsp fresh chopped basil (reserve 1 Tbsp for garnish)
- 3 cloves garlic chopped
- ½ cup fresh grated parmesan cheese
- 1 Tbsp butter
- Salt & Pepper
Bring a large pot of salted water to a boil. Add pasta cook according to package directions.
In a medium sauce pot over medium low heat, place the butter and chopped shallot. Sauté until the shallot is translucent add the garlic; cook until fragrant. Lower heat and add the cream, preserved lemon rind and chopped basil. Raise heat slowly while stirring, add the fresh lemon juice and zest, salt and pepper (we are heavy handed with the pepper). Continue stirring until the sauce begins to thicken, turn the heat off. Pour sauce over pasta, sprinkle parmesan cheese and gently stir to incorporate pasta, cheese & sauce.
We suggest serving with BBQ Salmon or Roasted Chicken.
