Citrus Salsa


From The Secrets of Salsa cookbook

  • 1 pound tomatillos, husked & washed
  • 1 bunch cilantro, minced
  • 2-3 jalapeno peppers
  • 1 small onion
  • 6 oranges
  • Salt to taste


Gently pulse tomatillos in a food processor or blender, without completely pureeing. Finely dice peppers and onion, and place into mixing bowl, combining with the gently blended tomatillos. Add chopped cilantro and the juice of two oranges. Salt to taste. Peel the remaining oranges and cut into small pieces. Add to salsa.

Serve with homemade tortilla chips (or your favorite store-bought brand) as a simple barbeque appetizer or as a condiment for tacos.
