Roasted Chicken Au Jus

1 whole chicken cut in half

1/2 stick butter, salted

1 white onion cut in half

1 cup water




Pre-heat oven to 375 degrees

Cut chicken in 1/2 and place skin side up in a roasting pan with 1/2 stick butter, place 1/2 onion at each end of the roasting pan.  liberally salt and pepper the chicken skin.  Plate it in the oven and roast for 40 minutes, baste chicken with 1/2 cup water.  Continue to roast for 20 minutes, baste with the other 1/2 cup of water.  Au Jus sauce should be a beautiful brown.  Stir if necessary.  Plate the chicken halves and pour over the sauce.  Enjoy!
